Ingredients
1 14 cups
dark chocolate chips
12 cup
cranberry sauce
2 tbsp
whipping cream
3 tbsp
cocoa powder
3 tbsp
icing sugar

Preparation
  1. Melt first 3 ingredients in a metal or glass bowl over steaming (not boiling) water, stirring regularly.
  2. Remove mixture from heat. Cool to room temperature. Once cool, place bowl in refrigerator for minimum 30 minutes.
  3. Place cocoa and icing sugar on separate plates. Roll teaspoons of chilled truffle mixture in hands (truffles can be irregular in shape), then roll in either Cocoa or icing sugar.
  4. Store in refrigerator and remove 5 minutes prior to serving.
